Recipe: Strawberry Frozen Yogurt

It’s ice cream season, baby! There’s no competing with the real deal… the eat-on-the-farm-next-to-the-cows creamery ice cream. But for the in-between days when it’s hot, you’re home, and you need a sweet treat, then DIY fro-yo hits the spot. Recipe here!

NOTE: Rinse, hull, and freeze your strawberries now so they’re ready to use when you want dessert. (Trust me.)

Don’t Call it Nice Cream

We’re not going to insult ice cream OR make you feel like you have to eat a “lighter,” lower-calorie, diet version. You can eat ice cream! But eating ice cream as regularly as you’d like to might not align with your goals - like lowering cholesterol, limiting added sugars, introducing probiotic foods, or increasing fiber. So, reserving full-fledged ice cream for nights out and being intentional with nutrient-dense desserts at home is a sound strategy.

Strawberries

Wake up, winter tastebuds! We’ve finally got in-season produce knocking our New England socks off. The 1/2 cup of strawberries per serving of this froyo gives you 50mg of vitamin C and 133mg potassium - an electrolyte lost in sweat that we should pay attention to replenishing in the heat. (So, what I’m really saying is this snack can help you refuel and rehydrate!)

If you went strawberry-picking and still need a reason to use up your yield, try something like this grilled strawberry salsa.

Greek Yogurt

I typically recommend plain, nonfat Greek yogurt to help you limit added sugars and keep saturated fat intake low. Greek versions have more protein than standard yogurt and include the benefit of being a source of probiotics - the bacteria that keep your digestive tract healthy.

Toppings & Add-Ins

You can make this as decadent as you’d like. I liked it as is, but my top recs for mix-ins would be:

  • Dark chocolate chips

  • Unsweetened coconut flakes

  • Crushed peanuts or walnuts
