Recipe: Chicken Tinga

NUTRITION COACHING AND MEAL PLANNING FROM YOUR REGISTERED DIETITIAN NUTRITIONIST HERE IN BOSTON’S BACK BAY

Let’s take Taco Tuesday to the next level… and make enough servings to last through Cinco de Mayo on Thursday! My thought? This spicy chicken tinga will pair perfectly with a cooling cucumber margarita and guac.

Chipotle Peppers in Adobo Sauce

These can get spicy. If you’re worried about the heat, add half the can (3.5oz) to start, and go until the spiciness is right for you.

Corn Tortillas

Corn tortillas are usually made with only corn flour, water, and salt. Meaning, they’re a no-frills vehicle for a spicy dish like this! Up for a challenge? Try making them yourself! You don’t even need a tortilla press; follow the instructions and simply press them between a cutting board and pan. Here’s my approach.
