Recipe: French Lentil and Radish Salad

Lentils

Lentils are a plant-based protein powerhouse. 1 cooked cup has 18 grams of protein (about the same as 3oz of chicken), 6 grams of iron (30% of the 18 grams daily recommended for women), and 16 grams of fiber.

Radishes

Crunchy, bitter, and beautiful. Radishes are an excellent source of vitamin C - about 30% of your daily needs in 1 cup! This vitamin C is exactly what you need to maximize absorption of the plant-based iron. Radishes also have small amounts of magnesium, iron, calcium, and vitamin B6.
